I am totally in love with the raw kale salad with tahini garlic dressing at Whole Foods! The delicious strong flavors, the chewy texture, and the super-food qualities of the ingredients make this one of my favorite “treats”. I love walking down the street to Whole Foods and picking up a large container of this salad, but I have been disappointed enough times that I finally took garlicky matters into my own garlicky hands. After searching and experimenting, this is my version of Garlicky Raw Kale Salad.
Ingredients
2 bunches kale, chopped and de-stemmed
4 cloves of garlic, pressed (or finely chopped)
4 T tahini
2 T extra virgin olive oil
1 T apple cider vinegar
1 T Bragg’s Liquid Aminos
1 T Nutritional Yeast
1 lemon, juiced
Water (Adjust for consistency. I like to spread my dressing over the 2 bunches so I make mine more watery.)

I read the secret to eating raw kale is that you have to massage it. Yes, really… So, after mixing together all the other ingredients, hand mix your garlicky tahini dressing by hand with your washed and de-stemmed kale. This will also ensure your delicious dressing makes its way onto each and every piece of kale.
For my competitor friends and fellow portion-watchers, this recipe makes 4 servings of fat. Tahini is measured just like nut butter (since it is just ground sesame seeds). When I make this recipe, I eat it within 2 days… one serving at lunch and one serving at dinner each day. This may be too much raw kale for your liking, so please feel free to decrease the amount of salad you make. If kale is not eaten within a couple days, it can become bitter and limp, so enjoy fresh kale salad by eating quickly. Dressing your kale immediately before eating your raw kale salad is also a great option.
