Marinated Steak Salad with Cilantro-Lime Dressing

Ingredients:

  • Steak (great way to use left over steak from the BBQ)
  • Marinade (of your choice)
  • Avocado
  • Red Bell Pepper
  • Yellow Bell Pepper
  • Sauteed mushrooms and onions
  • Raw mushrooms
  • Carrots
  • Cherry tomatoes
  • “Mexican Blend” of seasoned peanuts, sunflower seeds, and a couple different crunchy bits mmmmm…. adding crunch to a salad satisfies the craving of variety of texture
  • “Herb Blend” Salad mix… not sure if this is new but it was a new discovery for me and it was AMAZING! Little splashes of delicious goodness in there!
  • Dressing: I used my Magic Bullet to blend lime juice, cilantro, apricot oil (very light flavor), salt and pepper. You can add a little avocado or Greek yogurt if you would like to make it a little creamier.

Directions:

Cook the steak and mushrooms/onions and pile it on! Enjoy!
