I spent 5 months in Costa Rica and during my time there, I ate a lot of fish tacos, black beans, and ceviche. This picture was painted for me by my client’s daughter and between my meal of fish tacos and ceviche and this beach scene, I felt like I was was transported back to Costa Rica. Even if it was just for lunch.
Ingredients:
- 1.5 pounds white fish (I used tilapia)
- 1 package corn tortillas
- 1 c. red cabbage, shredded
- 1 c. white cabbage, shredded
- 1 avocado, sliced
- 3T cilantro, finely chopped
- Weber Mango Lime Seafood Seasoning
- 2 limes, cut into wedges
- 2T apricot oil (or other cooking oil)
Instructions:
Heat apricot oil in large skillet to medium. Season tilapia filets with Weber Mango Lime Seasoning and place in the pan. Cook on both sides until cooked throughout.
Serve each taco with a taco shell, 1/2 filet of tilapia, and a sprinkle of red cabbage, white cabbage, sliced avocado, cilantro, and squeeze lime juice on the top.
This super simple healthy recipe is one of my favorite “easy meal” go-to’s.
I love to serve this with black beans. Just rinse a can of black beans, add some tomatoes, cilantro, seasoning, and heat throughout.
