Who needs candy, cakes, and ice cream when you can have a clean desert like coconut plantains? These delicious little bits are clean, nutritious, and so delicious! Portion size is always in full effect because too much of a good thing… well, is still too much!
When choosing a plantain, select one that is already ripe. Then, let it get even MORE ripe… until it is BLACK. Sounds a little strange, but that is how it is done!
Add 1T of unrefined coconut oil to a frying pan and heat to medium temperature.
Peel and slice the ripe plantain.
You can choose to cut it in half and then long, thin slices, or into small, round slices. The choice is yours. I recommend cutting it into slices that are 1/4 of an inch thick.
Place them into the pan with the heated oil and cook until the sugars in the plantain start to caramelize and turn a dark brown. I personally like mine a little extra dark so I cook them until some parts start to turn black even.
Then flip them to the other side and cook the same.
These little bites of heaven can be eaten just like this or served with a dash of cinnamon on top of them.
