Ingredients
- 18 egg whites
- 2 whole egg
- Pinch coarse sea salt and pepper
- 2 tsp olive oil
- 2 cup fresh asparagus, chopped in 1/2 inch pieces
- 1 small container mushroom, diced
- 1 red bell pepper, diced
- 1 small red onion, finely chopped
- Cooking spray or olive oil for the muffin tin
Directions
Preheat oven to 350 degrees.
Heat 2 tsp of olive oil in a pan over medium heat.
Add the asparagus, mushrooms, red bell pepper, and red onion, and cook for 5 minutes until softened.
Allow to cool slightly. Meanwhile, in a medium bowl, whisk your eggs, egg whites, and salt and pepper.
Stir in the cooled vegetables.
Spray 2 large muffin tins with cooking spray. Fill each muffin tin about 1/2 full with the egg mixture.
Sprinkle a pinch of coarse sea salt on the top of each muffin to taste and bake for 35-40 minutes, until the egg is no longer soft.
