Ingredients:
- Steak (great way to use left over steak from the BBQ)
- Marinade (of your choice)
- Avocado
- Red Bell Pepper
- Yellow Bell Pepper
- Sauteed mushrooms and onions
- Raw mushrooms
- Carrots
- Cherry tomatoes
- “Mexican Blend” of seasoned peanuts, sunflower seeds, and a couple different crunchy bits mmmmm…. adding crunch to a salad satisfies the craving of variety of texture
- “Herb Blend” Salad mix… not sure if this is new but it was a new discovery for me and it was AMAZING! Little splashes of delicious goodness in there!
- Dressing: I used my Magic Bullet to blend lime juice, cilantro, apricot oil (very light flavor), salt and pepper. You can add a little avocado or Greek yogurt if you would like to make it a little creamier.
Directions:
Cook the steak and mushrooms/onions and pile it on! Enjoy!
