Waldorf Salad a la Stephanie!
2 cooked and chilled chicken breasts
1/2 Cup chopped walnuts (raw)
2 ribs celery (with leaves), sliced into 1/2-inch-thick pieces (leaves chopped)
1/2 Cup red seedless grapes, sliced (or a 1/4 cup of golden raisins)
1 sweet apple, cored and chopped, such as Gala
2 Tablespoons minced fresh flat-leaf parsley
1 Teaspoon honey
1/2 Cup non-fat yogurt
3 Tablespoon light mayonnaise
½ lemon freshly squeezed juice
Handful of roasted chickpeas
Salt
Freshly ground black pepper (to taste)
Lettuce (I used the “Herb Blend”)
